He was kind enough to also pass along a couple of his recipes which you can read about below:

 

KC BBQ SAUCE FOR RIBS:

1 1/2 cups tomato puree
1/3 cup distilled white vinegar
3 Table spoons of Balsamic Vinegar
3 table spoons Dijon mustard
3 tablespoons dark corn syrup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 1/2 tablespoons molasses
1/2 teaspoon grated lemon zest
3 tablespoons fresh lemon juice
1 tablespoon thawed orange juice concentrate
10 raisins
1 garlic clove
2 teaspoons soy sauce
1 teaspoon Tabasco sauce or other hot sauce
1 1/2 teaspoons coarse salt (kosher or sea), or more to taste
1 teaspoon onion powder
1/2 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon ground cloves

BBQ Spice Mix Rub:
4 ounces smoked paprika
2 ounces sugar
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon chipotle powder

 

Alabama BBQ is lesser known but turns to a decadent and unconventional  White Sauce which is a mayonnaise and vinegar based  and utilized as a condiment sauce, marinade, and dressing for meat.  The Eastern regions of Alabama tends borrow the Carolinas style, with orange-colored barbecue sauces combining vinegar, mustard, and tomato.

2 cups mayonnaise
1 cup cider vinegar
1/2 cup prepared white horseradish (optional)
2 teaspoons coarse salt (kosher or sea)
2 teaspoons coarsely ground black pepper
1/2 teaspoon cayenne pepper, or to taste

 

Trim excess fat from ribs and peel silver skin from back.  Liberally coat the meat with Spice rub and refrigerate for 4-24 hours.

Indirect cooking is key to prevent burning. Cook at 250 degrees F (curled side of ribs facing up) for the first 3 hours, and then increase the temperature to 300 degrees F for the final 3 hours.   Yup, this is a low and slow recipe but well worth it in the end.

Baste the ribs ONLY during the last 30 minutes of cooking to prevent sauce from burning.  You can also add a small smoke box for the authentic smoked rib flavour.
